Ingredients:

  • A cup of boiled corn 1
  • A cup of peeled pomegranate seeds 1
  • Lemon or lime ½
  • Chopped mint leaves 3-4
  • Chopped coriander leaves 3-4
  • Tamarind extract 2 tbsp
  • Cumin powder ½ tbsp
  • Salt as required

Directions:

  • Put the boiled corn, pomegranate seeds and chopped mint and coriander leaves in a medium-sized bowl and mix well.
  • Add a few drops of lime or lemon, tamarind extract, salt, and cumin powder.
  • Toss the mixture well. Your Corn and Pomegranate Chaat is ready to serve.

2. Garden Fresh Corn Salad.


Prep time 25 minutes servings 2 people.

Ingredients:

  • Cups of boiled corn 3
  • sized tomato, chopped 1
  • Cup chopped cucumber ½
  • Cup chopped onions ½
  • Chopped mint leaves 1 tbsp
  • Chopped mint leaves 1 tbsp
  • Chopped basil and 1 tbsp
  • Virgin olive oil 1 tbsp
  • Clove of garlic, minced 1 medium
  • Salt as required
  • Black pepper as required

Directions:

  • Put the boiled corn, chopped tomatoes, cucumber, onions, mint, basil, and parsley in a large bowl and mix well.
  • In a separate bowl, mix virgin olive oil, minced garlic, salt, and black pepper. Whisk them well for 2-3 minutes.
  • Pour this mixture over the salad in a large bowl.
  • Toss the salad well so that the virgin olive oil dressing coats every ingredient properly.
  • You can serve it immediately or chill it in the refrigerator for later consumption.

3. Corn and Capsicum Tikki.


Prep time 20 minutes Serving 2 people

Ingredients:

  • Capsicum 3 cup
  • Refined oil 1 cup
  • Corn kernels 2 cup
  • Rice flour 8 tbsp
  • Green chili 4 tsp
  • Green chilies chopped as required
  • Jalapenos chopped as required
  • Salt as required

Directions:

  • Take a blender and blend corn in it to make a paste. pls, Don't add water to the corns while blending.
  • Take a bowl and mix corns paste along with the chopped capsicum, green chilies, rice flour, and salt.
  • After making some round tikkis from the mixture, roll out flat and take a deep bottomed pan, keep it on medium flame, and heat oil in it.
  • Deep fry the tikkis in the pan until golden brown and after that take them out on an absorbent paper and serve hot with chutney or ketchup.

4. Creamy Corn Dip.


Prep time 20 minutes Serving 2 people

Ingredients:

  • Corn kernels boiled & mashed 1 Cup
  • Green chilies chopped as required
  • Jalapenos chopped as required
  • Crumbled cottage cheese 2 tbsp
  • Greek yogurt plain 1/4 cup
  • Coriander leaves chopped 1 tsp
  • Bell pepper chopped 1/2 tsp
  • Onion small chopped 1/2 tsp
  • Chili powder 1/2 tsp
  • Lime juice 1 tsp
  • Black pepper 1/4 tsp
  • Salt as required

Directions:

  • Add all the ingredients to a large mixing bowl and mix well.
  • Adjust the seasoning as desired.
  • Serve with baked chips or veggie sticks.
